The fascinating story of Los Poblanos started around 1930s to the 1940s when it was nothing more than a model experimental farm. Nowadays, set among 25 acres of lavender fields, enormous cottonwood trees and lush formal gardens, the property comprises 45 guest rooms, a field-to-fork restaurant, a working organic farm and a retail and production space. Regardless of what your heart aches for, comfort, nature, intimacy, or a beautiful space to relax, Los Poblanos not only delivers, but it goes way beyond expectations.

Historic Inn & Organic Farm

Heritage is one of the defining traits of a place. Therefore, it goes without saying that constant effort is being put into preserving the agricultural history of Los Poblanos. For this purpose, a significant percentage of the property is dedicated to organic farming. Wooden beams always add charm to any venue and Los Poblanos is no exception. Immaculate white walls contrasting with earthy toned furniture, silver chandeliers and suggestive elements of interior design combine to create a relaxed atmosphere oozing personality.

The Location

Who can resist a lavender field? Imagine endless purple flowers in bloom and the air filled with their irresistible perfume. What a dream! Make sure you visit Los Poblanos by mid-July to witness the harvesting process or even take part in exciting workshops, aromatherapy classes, tours or demos. Tended by hand, the lavender fields are turned into unique products that carry the story of the place and its core values.

The Rooms

Designed by John Gaw Meem, the rooms follow the classic New Mexican style. Warm and cosy, they impress by their distinguished simplicity with a touch of modernism. The Farm Suites feature rustic wood burning fireplaces, hardwood floors, original artwork and incredible views of the gardens.

Nibbles & Tipples

Given their continuous preoccupation with organic farming, food at Los Poblanos cannot be anything but exquisite. Campo is a casual fine-dining experience based exclusively on seasonal organic ingredients harvested locally. The bar menu features small-batch barrel-aged spirits and house-made components including lavender syrup, bitters and amaros.
