The fascinating story of Los Poblanos started around 1930s to the 1940s when it was nothing more than a model experimental farm. Nowadays, set among 25 acres of lavender fields, enormous cottonwood trees and lush formal gardens, the property comprises 45 guest rooms, a field-to-fork restaurant, a working organic farm and a retail and production space. Campo is a casual fine-dining experience based exclusively on seasonal organic ingredients harvested locally. The bar menu features small-batch barrel-aged spirits and house-made components including lavender syrup, bitters and amaros.
